Nothing beats these hearty beef burritos wrapped in soft tortillas. They're packed with juicy seasoned ground beef, gooey cheese, and filling black beans. We always whip up extra since folks can customize with their own toppings, plus they somehow taste way better when you grab them the day after.

Why This Dish Works Wonders

You'll get these tasty wraps on the table in half an hour, making them perfect for crazy weekday evenings. Customize them however you want with your go-to ingredients. And here's a bonus - they're amazing for planning ahead. Just fold them up and stash them for later meals.

What Goes In

Pick up decent ground beef - an 85/15 mix gives you awesome taste. Throw in some black beans or mixed beans for extra nutrients, a bag of Mexican cheese mix, and big flour tortillas. The flavor comes from that perfect spice combo: some cumin, paprika, chili powder, plus a good hit of salt and pepper.

Putting It Together

Cook your beef until it's no longer pink, then mix in those tasty spices and onion. Dump in some Rotel tomatoes with the black beans and let it bubble until everything thickens up nicely. Then comes the fun bit - spread cheese and your meat mixture across each tortilla. Fold them up tight and cook them in a pan until they're crispy and golden.

Switch Things Up

Want more kick? Throw in some rice, corn or hot jalapeños. Don't eat meat? Skip the beef and go heavy on cooked veggies and beans instead. These also freeze really well, so you can make a bunch ahead for quick meals later on.

Storage Tips

These tasty wraps will stay good in your fridge for around 4 days. Want to save them longer? Wrap them up properly and they'll last 3 months in the freezer. When hunger strikes, warm them in a pan for that nice crunch outside or zap them in the microwave if you're in a rush.

Frequently Asked Questions

→ Are these spicy or mild?
You can control the spice level. For a mild version safe for kids, use just a pinch of chili powder. Want more heat? Go for 1/2 teaspoon!
→ How do I wrap a burrito perfectly?
Pile the filling in the center, fold the short sides in, bring the bottom flap over the filling, and roll it tight until it's sealed.
→ Why fry the burrito after wrapping?
Heating them in a pan gives a golden, crispy crust, helps seal the tortilla, and ensures the cheese melts beautifully inside.
→ Can I swap out the beans?
Totally! Black beans or mixed beans both work. Keep a splash of bean juice to keep the filling nice and moist.
→ How much mixture should I add?

Ingredients

01 6 large flour tortillas, about 10 inches each.
02 1 medium onion, diced finely.
03 1 pound of 85/15 ground beef.
04 15 oz can of black beans, liquid included.
05 1/2 teaspoon smoked paprika.
06 A teaspoon of ground cumin.
07 2 cups Mexican cheese, shredded.
08 10 oz can Rotel with chilies and tomatoes.
09 1/2 teaspoon fine sea salt.
10 Black pepper, 1/4 teaspoon.
11 1/4 to 1/2 teaspoon chili powder for heat.

Instructions

Step 01

In a big skillet, cook the beef on medium-high until fully browned, about 5 minutes. Remove most of the grease, leaving just a few spoonfuls for flavor.

Step 02

Toss in the onion and all the spices. Let it cook until the onion softens and the meat gets deeper in color, 3–4 minutes.

Step 03

Pour in the beans with their liquid and the tomatoes. Lower the heat to medium-low and let it simmer until most of the liquid cooks off, around 8–10 minutes. Adjust the taste if needed.

Step 04

Spread the cheese and meat filling on each tortilla. Tuck in the sides, fold up the bottom, and roll it up tight.

Step 05

On medium heat, add a bit of oil to a skillet. Lay the burritos seam-side down and toast them until they’re crispy and golden on every side, about 3–5 minutes.

Notes

  1. Spice level can be adjusted by adding or reducing chili powder.
  2. Switch black beans out for a mix of beans, like tri-bean blends.
  3. Add your favorite toppings to make it your own.
