Beef Burritos (Print Version)

# Ingredients:

01 - 6 large flour tortillas, about 10 inches each.
02 - 1 medium onion, diced finely.
03 - 1 pound of 85/15 ground beef.
04 - 15 oz can of black beans, liquid included.
05 - 1/2 teaspoon smoked paprika.
06 - A teaspoon of ground cumin.
07 - 2 cups Mexican cheese, shredded.
08 - 10 oz can Rotel with chilies and tomatoes.
09 - 1/2 teaspoon fine sea salt.
10 - Black pepper, 1/4 teaspoon.
11 - 1/4 to 1/2 teaspoon chili powder for heat.

# Instructions:

01 - In a big skillet, cook the beef on medium-high until fully browned, about 5 minutes. Remove most of the grease, leaving just a few spoonfuls for flavor.
02 - Toss in the onion and all the spices. Let it cook until the onion softens and the meat gets deeper in color, 3–4 minutes.
03 - Pour in the beans with their liquid and the tomatoes. Lower the heat to medium-low and let it simmer until most of the liquid cooks off, around 8–10 minutes. Adjust the taste if needed.
04 - Spread the cheese and meat filling on each tortilla. Tuck in the sides, fold up the bottom, and roll it up tight.
05 - On medium heat, add a bit of oil to a skillet. Lay the burritos seam-side down and toast them until they’re crispy and golden on every side, about 3–5 minutes.

# Notes:

01 - Spice level can be adjusted by adding or reducing chili powder.
02 - Switch black beans out for a mix of beans, like tri-bean blends.
03 - Add your favorite toppings to make it your own.
