Pour off the pineapple juice and measure up to 1 1/2 cups. If it's not enough, top off with water.

In a big skillet, combine pineapple juice, 2 1/2 cups sugar, and corn syrup. Warm it up until the sugar is dissolved, then let it boil for 4 minutes.

Put the pineapple slices in a single layer in the skillet. Let them simmer on low heat for about 45 minutes. Turn the slices often so they cook evenly and go see-through.

Move the pineapple rings to a drying rack. Dry them overnight in the air or put them in a 200°F oven for 30 minutes until they're no longer sticky.

Once cool, toss the rings in the leftover 1/2 cup of sugar before serving.
