Sweet Pineapple Rings (Print Version)

# Ingredients:

01 - Two 20-ounce cans of pineapple slices in thick syrup.
02 - Three cups sugar, split up.
03 - 1/4 cup of light corn syrup.

# Instructions:

01 - Pour off the pineapple juice and measure up to 1 1/2 cups. If it's not enough, top off with water.
02 - In a big skillet, combine pineapple juice, 2 1/2 cups sugar, and corn syrup. Warm it up until the sugar is dissolved, then let it boil for 4 minutes.
03 - Put the pineapple slices in a single layer in the skillet. Let them simmer on low heat for about 45 minutes. Turn the slices often so they cook evenly and go see-through.
04 - Move the pineapple rings to a drying rack. Dry them overnight in the air or put them in a 200°F oven for 30 minutes until they're no longer sticky.
05 - Once cool, toss the rings in the leftover 1/2 cup of sugar before serving.

# Notes:

01 - The leftover syrup can be used in drinks or as a topping.
02 - Keep at room temperature for up to a week.
03 - If it's humid, you might need to roll the rings in sugar again.
