Set your oven to 400°F (200°C) and let it heat up.

Use a big bowl to cream together the sugar, softened butter, and vanilla until smooth.

Crack in the egg, then mix everything again until it's smooth and combined.

Toss in the flour, baking soda, baking powder, and salt to the butter mixture. Mix until it turns into dough.

Add the green gel food coloring and stir until the dough's color is even. Adjust based on how bold you want the green.

Scoop out dough with a 1-tablespoon scooper. Roll each into a ball and place them on your greased baking pan.

Press a fork into each dough ball in two different directions to make a shell pattern. Make sure they're about ½-inch thick when flattened.

Shape a small bit of dough for the head, and tinier bits for the legs. Attach them carefully to each turtle body.

Pop them into the hot oven and bake for 5-7 minutes. Watch for the bottoms to lightly brown before taking them out.

Move the cookies onto a cooling rack after baking, and don't touch them until they've cooled completely.
