Garlic Roast Methods (Print Version)

# Ingredients:

01 - Two whole garlic bulbs (about 3 1/2 ounces or 100g).
02 - Neutral vegetable oil or extra-virgin olive oil—use as much as needed.
03 - Coarse kosher salt.
04 - Black pepper, freshly ground.

# Instructions:

01 - Set oven to 375°F. Peel off loose garlic skins and trim about 1/2 inch from the bulb tops.
02 - Grab a baking sheet with edges and add a wire rack. Rip a piece of foil about 12 inches by 8 inches.
03 - Put garlic bulbs cut side up on the foil, pour on some oil, sprinkle salt and pepper, then wrap the foil tightly around them.
04 - Pour 1 cup of oil into an oven-friendly saucepan. Place garlic bulbs cut side down inside and cover the pan.
05 - Bake for 45 minutes until the garlic is soft and golden. Let it cool for 5 minutes before squeezing out the cloves.
06 - Simmer the garlic in the oil for about 20 minutes, flip the bulbs over, and cook another 20-25 minutes until tender. Cool it down for 5-10 minutes before squeezing out the cloves.

# Notes:

01 - You can stick to one oil type or mix olive oil and vegetable oil.
02 - Mixing half olive oil and half canola oil works well for the oil method.
03 - Filter the oil later if any papery scraps are floating around.
