Quick Fish Stew (Print Version)

# Ingredients:

01 - 6 tbsp olive oil.
02 - 1 small onion, finely diced.
03 - 3 cloves garlic, finely chopped.
04 - 2/3 cup parsley, freshly chopped.
05 - 1 1/2 cups diced tomatoes.
06 - 2 tsp tomato paste.
07 - 8 oz bottle of clam juice.
08 - 1/2 cup of dry white wine.
09 - About 1 1/2 lbs white fish fillets, firm.
10 - 1/2 tsp oregano, dried.
11 - 1/2 tsp thyme, dried.
12 - A dash (1/8 tsp) of Tabasco.
13 - 1/8 tsp ground black pepper.
14 - 1 tsp table salt.

# Instructions:

01 - Heat oil, cook onions for 4 mins. Toss in garlic for 1 min. Stir in parsley for 2 mins.
02 - Pour in diced tomatoes and stir in the paste. Let it go for about 10 mins.
03 - Stir in liquids and fish, letting it simmer 3-5 mins, just until the fish easily breaks apart.
04 - Mix in the herbs, hot sauce, salt, and pepper.

# Notes:

01 - Other types of firm white fish work great too.
02 - You can throw in shellfish if you'd like.
03 - Goes well with some crusty bread on the side.
