Get rid of any pumpkin bits stuck to the seeds. Use a colander to wash away strings and flesh completely.

Boil a water-filled pot. Let seeds simmer in it for around 10 minutes.

Drain seeds thoroughly. Use a dish towel to dab them until they’re nice and dry.

Mix salt and olive oil with the seeds in a bowl.

Set oven to 300°F. Arrange seeds in a single even layer on a sheet pan.

Bake seeds for 40-55 minutes. Stir them first at 15 minutes, then every 10 minutes, until golden and crunchy.
