Cottage Cheese Egg Bake (Print Version)

# Ingredients:

01 - 1 lb mild Italian sausage.
02 - 10 eggs, large size.
03 - 2 packed cups (2.5 oz) of fresh spinach.
04 - 1/3 cup sun-dried tomatoes (in oil).
05 - 1 cup full-fat cottage cheese.
06 - 1/2 tsp garlic powder.
07 - 1/2 tsp ground black pepper.
08 - 1 tsp kosher salt.

# Instructions:

01 - Set your oven to 350°F and let it warm up.
02 - Brown the sausage for 5 minutes while crumbling it. Drain the grease when done.
03 - Mix eggs, seasonings, and cottage cheese in a blender until smooth.
04 - Transfer the blended mixture to a baking dish.
05 - Scatter chopped spinach, sausage, and tomatoes over the mixture. Gently mix to blend.
06 - Pop into the oven for 35 minutes until the center is firm.
07 - Let it cool a bit before slicing.

# Notes:

01 - Pick raw sausage, skip the pre-cooked ones.
02 - For a lighter option, swap in chicken sausage.
03 - Drain the oil off the sun-dried tomatoes first.
04 - Don't cut while too hot; let it sit and cool down.
