Cheesy Spinach Dish (Print Version)

# Ingredients:

01 - 3 containers of fresh spinach (10 oz each).
02 - 4 ounces of cream cheese.
03 - 1 teaspoon ground black pepper.
04 - 1/2 cup shredded parmesan cheese.
05 - 4 teaspoons of salt.
06 - 1 cup mixed mozzarella and provolone cheese.
07 - 1 tablespoon powdered onion.
08 - 1/4 cup plain flour.
09 - 1½ cups of 2% milk.
10 - 1/2 teaspoon ground nutmeg.
11 - 2 cups of half-and-half cream.
12 - 3 minced garlic cloves.
13 - 4 tablespoons of plain butter (no salt).

# Instructions:

01 - Toss spinach into salted boiling water for 60 seconds.
02 - Drain the hot water and rinse spinach under cold water.
03 - Squeeze out the moisture and chop into small pieces.
04 - Heat butter with garlic and onion powder for a couple minutes.
05 - Mix in a sprinkle of pepper, nutmeg, and salt.
06 - Sprinkle in your flour and cook for 2 minutes, stirring.
07 - Slowly add milk and half-and-half, letting it boil gently.
08 - Melt in the cream cheese and the mozzarella mix.
09 - Let it cook on low for 5-6 minutes until smooth and creamy.
10 - Fold in the spinach and shredded parmesan last.

# Notes:

01 - Swap onion powder with minced fresh onion if preferred.
02 - Add extra spinach for more greens.
03 - Good quality half-and-half works best.
04 - Try tossing in some crispy bacon pieces for fun.
