Black Bean Corn Mix (Print Version)

# Ingredients:

01 - 1/2 cup of your favorite zesty Italian dressing.
02 - 1/3 cup of chopped cilantro for that fresh kick.
03 - 1 tablespoon of lime juice for a tangy twist.
04 - 1 bag (12 oz) of frozen corn—defrosted.
05 - 1 can (15 oz) of black beans, rinsed and drained.
06 - 1 can (15 oz) of cannellini beans, drained well.
07 - 1 red bell pepper, diced into small pieces.
08 - 1/2 teaspoon of garlic powder for depth.
09 - 1/2 teaspoon of kosher salt to taste.
10 - 1/2 teaspoon of cumin for a smoky flavor kick.

# Instructions:

01 - Set the corn out for 15 minutes so it softens at room temperature.
02 - In a big bowl, toss together your corn, beans, bell peppers, and cilantro.
03 - In a separate small bowl, whisk the dressing, lime juice, and spices until combined.
04 - Drizzle the dressing over the veggie mix and give it all a good stir.
05 - Refrigerate the mix for 4 hours to let the flavors soak in.
