Lightly grease a 9×13 inch baking dish.

Place the bread chunks in a large mixing bowl and leave them aside for later.

In a separate bowl, whisk the eggs, cinnamon, vanilla, sugars, milk, and cream together until smooth.

Add bananas and pour the wet mix over the bread pieces. Gently stir everything until the bread absorbs the mixture.

Spread the combined bread and egg mixture evenly into the prepared dish. Cover and chill in the fridge overnight.

Heat your oven to 350°F (176°C). Put the dish in and bake for 35–40 minutes, or until it's as firm or soft as you like.

While the casserole cooks, mix together the cinnamon, flour, and brown sugar in a bowl. Mash in the butter chunks until you’ve got a crumbly topping.

Take the baking dish out just before it’s done and sprinkle the streusel evenly over the top.

Put the casserole back in and bake it for another 5 minutes, or until the topping melts and sets.

Serve while warm, and drizzle with syrup if you’d like.
