Baked Banana French Toast (Print Version)

# Ingredients:

→ Casserole

01 - 1 1/2 tsp ground cinnamon
02 - 6–7 medium bananas, sliced up
03 - 8 large eggs
04 - 1 lb loaf of sourdough or French bread, torn into pieces
05 - 2 cups (480 ml) whole or 2% milk
06 - 1/4 cup (36 g) loosely packed light brown sugar
07 - 1/2 cup (104 g) white granulated sugar
08 - 1/2 cup (120 ml) heavy cream
09 - 2 tsp vanilla flavoring

→ Streusel Topping

10 - 1/2 cup (112 g) salted butter, chopped into small chunks
11 - 3/4 cup (169 g) packed brown sugar
12 - 1 tsp ground cinnamon
13 - 3/4 cup (98 g) regular all-purpose flour

# Instructions:

01 - Lightly grease a 9×13 inch baking dish.
02 - Place the bread chunks in a large mixing bowl and leave them aside for later.
03 - In a separate bowl, whisk the eggs, cinnamon, vanilla, sugars, milk, and cream together until smooth.
04 - Add bananas and pour the wet mix over the bread pieces. Gently stir everything until the bread absorbs the mixture.
05 - Spread the combined bread and egg mixture evenly into the prepared dish. Cover and chill in the fridge overnight.
06 - Heat your oven to 350°F (176°C). Put the dish in and bake for 35–40 minutes, or until it's as firm or soft as you like.
07 - While the casserole cooks, mix together the cinnamon, flour, and brown sugar in a bowl. Mash in the butter chunks until you’ve got a crumbly topping.
08 - Take the baking dish out just before it’s done and sprinkle the streusel evenly over the top.
09 - Put the casserole back in and bake it for another 5 minutes, or until the topping melts and sets.
10 - Serve while warm, and drizzle with syrup if you’d like.
