Thinly slice the stone fruits, and if using cherries, take out the pits.

Toss all the prepped fruit into a big bowl.

Mix lemon juice, syrup, vanilla, cinnamon, salt, and thyme in a smaller bowl using a whisk until smooth.

Drizzle the dressing over the fruit. Gently stir to coat. You can serve it right then or put it in the fridge for an hour to chill before eating.
