Crispy Dill Cheese Bites (Print Version)

01 - 1/2 cup finely shredded aged Gruyère or Havarti cheese (60g)
02 - 4 tablespoons diced cold butter
03 - 1/3 cup heavy cream or half & half, chilled (45-60ml)
04 - 3/4 teaspoon onion powder (2.5g)
05 - 1 tablespoon chopped fresh dill or 1 1/2 teaspoons dried dill
06 - 1 cup plain flour (125g)
07 - 1/2 teaspoon table salt

# Instructions:

01 - Combine the shredded cheese, cold butter pieces, flour, salt, onion powder, and dill in a food processor or blender. Slowly drizzle in the chilled cream, one spoonful at a time, and blend until the dough starts clumping together or looks sandy but moist.
02 - Place the dough onto plastic wrap and flatten it into a round disk. If you'd like, you can roll it out now under another sheet of plastic wrap to the preferred thickness. Wrap it tight and stick it in the fridge for a few hours or overnight so it solidifies.
03 - When you're set to bake, fire up your oven to 400°F (200°C). Grab a baking tray and cover it with a silicone mat or parchment paper.
04 - Take the dough out from the fridge. If you didn't roll it earlier, roll it now to about 1/4 inch thickness or thinner if you'd rather. Use a cookie or pizza cutter to make shapes and lay them on the prepared sheet. Poke holes with a fork on top of each piece so they don't puff up while cooking.
05 - Pop the crackers in the hot oven for 10 to 12 minutes, till the tops just start to turn golden. Let them cool fully on the tray before you enjoy them.
