Crispy Cheese Doritos (Print Version)

# Ingredients:

01 - 1 packet of Chili Heatwave Doritos (6.4 oz).
02 - 1 chilled block of mozzarella cheese (14 oz).
03 - 4 cups of frying oil.
04 - 1/3 cup plain flour.
05 - 2 eggs, large.
06 - 1 teaspoon of cayenne.
07 - 1 teaspoon smoked paprika.
08 - 1/2 teaspoon of garlic powder.
09 - 1/4 teaspoon black pepper.
10 - 1/4 teaspoon salt, and extra for topping.

# Instructions:

01 - Cut the cold mozzarella into 24 triangular pieces around 1/3 inch thick.
02 - Use a plastic bag or food processor to turn the Doritos into fine crumbs.
03 - In a shallow plate, mix the flour with garlic powder, paprika, cayenne, salt, and pepper.
04 - Set out three containers: one for seasoned flour, one for eggs, and one for crushed Doritos.
05 - Coat each triangle by dipping it into the flour, then egg, and finally the Doritos crumbs. Press gently.
06 - Put the coated cheese on a tray and let it sit for 15 minutes so the coating stays on better.
07 - Get your oil to 350°F in a skillet or deep pot.
08 - Fry the cheese in small amounts for 1-2 minutes, until the coating is golden but cheese stays inside.
09 - Put fried pieces on a wire rack and sprinkle with a little extra salt while they're still warm.

# Notes:

01 - Using low-moisture mozzarella keeps it from melting too quickly.
02 - You can freeze the breaded cheese before frying to make the coating even better.
03 - Goes great with sauces like marinara, sour cream, or salsa.
