Caramel Apple Cookies (Print Version)

# Ingredients:

01 - ¾ cup brown sugar, firmly packed.
02 - 1 teaspoon vanilla extract.
03 - 1 large egg.
04 - 2 cups plain flour.
05 - ½ cup caramel bits or 15-20 small caramel candies, cut up.
06 - ¼ cup granulated sugar, plus 1 tablespoon for apples.
07 - 1 teaspoon cinnamon, with ½ teaspoon extra for the apple pieces.
08 - ½ teaspoon baking soda.
09 - ½ teaspoon salt.
10 - ½ teaspoon baking powder.
11 - ¾ cup softened unsalted butter, plus 1 tablespoon for sautéing apples.
12 - 1 cup apple, peeled and finely diced.

# Instructions:

01 - Melt 1 tablespoon butter in a skillet. Toss in apple chunks, sprinkle with sugar and cinnamon, then cook for 3-5 minutes till tender. Cool down completely before use.
02 - In a bowl, stir together flour, baking soda, baking powder, salt, and 1 teaspoon cinnamon.
03 - In another bowl, beat the unsalted butter with both sugars until creamy. Add the egg and vanilla, then continue mixing until smooth.
04 - Pour the dry blend into the wet mix and stir till just combined. Fold in the cooled apples. If dough is sticky, pop it in the fridge for 15-20 minutes.
05 - Scoop a small portion of dough, flatten slightly, place a caramel piece in the middle, and wrap the dough around, sealing it well.
06 - Line a baking sheet with parchment and set cookies two inches apart. Bake at 350°F for about 10-12 minutes, just till the edges are lightly golden.
07 - Let them rest briefly on the baking sheet, then move them to a cooling rack to finish cooling.

01 - Cook the apples until they’re soft so they blend in perfectly.
02 - If the dough gets tricky to handle, chill it briefly to firm it up.
03 - Make sure to completely enclose the caramel to avoid it leaking out.
