Cheesy Spinach Bites (Print Version)

# Ingredients:

→ Filling with Spinach

01 - 1 cup cream cheese, brought to room temperature
02 - 1 cup of fresh, chopped spinach (can substitute with pre-thawed and drained frozen spinach)
03 - 1/2 cup mayo
04 - 1/2 cup of sour cream
05 - 1/4 cup of Parmesan cheese, finely grated
06 - 1 cup mozzarella cheese, shredded
07 - 1 tsp onion powder
08 - 1 tsp garlic, minced (or a pinch of garlic powder)
09 - Salt and ground black pepper, season to preference

→ Dough Base

10 - 12 oz of store-bought biscuit dough (you can also use pre-made pastry shells)
11 - Cooking oil spray or a dab of olive oil (for muffin pan prep)

# Instructions:

01 - Warm your oven to 375°F (190°C). Fresh spinach? Sauté till it’s soft and shrunk in a medium-heat pan. Frozen? Let it thaw fully, squeeze out excess water, then chop if needed.
02 - Grab a medium bowl and stir softened cream cheese, sour cream, mayo, mozzarella, Parmesan, garlic, onion powder, salt, and pepper. Keep mixing until everything’s creamy and consistent.
03 - Toss the spinach into the cheese mixture, mixing until everything's evenly blended.
04 - Lightly coat a muffin pan with cooking spray or olive oil. Divide the biscuit dough into sections, pressing each one into a muffin cup to build the shell, making sure to push it up the edges.
05 - Scoop the spinach-cheese mix into every biscuit shell. Bake for 15-20 minutes or until the biscuits turn golden, and the cheese looks creamy and bubbly.
06 - Let the bites settle for a few minutes before digging in. These taste great warm or even once they've cooled a bit.
