Tropical Pineapple Loaf (Print Version)

# Ingredients:

01 - 1 1/2 cups powdered sugar.
02 - 2 cups of all-purpose flour.
03 - 3 teaspoons of vanilla extract.
04 - 1 teaspoon table salt.
05 - 1/2 cup of sour cream.
06 - 3 tablespoons of reserved pineapple juice.
07 - 3 ounces of softened cream cheese.
08 - 1 cup of granulated sugar.
09 - 1 teaspoon of baking soda.
10 - 1 large beaten egg.
11 - 1 (20-ounce) can of crushed pineapple, drained (save a few tablespoons of juice).

# Instructions:

01 - Heat your oven to 350°F and lightly oil your loaf pan.
02 - In a medium mixing bowl, toss together salt, baking soda, and flour.
03 - In another bowl, whip cream cheese, egg, vanilla, and sugar until the mix is velvety smooth.
04 - Gently fold the flour mixture into the wet mixture. Add sour cream, stir to combine, then mix in the drained pineapple.
05 - Pour the batter into the loaf pan and bake for 55-60 minutes. It’s done when a toothpick in the center comes out without sticky batter.
06 - Let it cool in the pan for 15-20 minutes, then shift the loaf to a wire rack to cool down completely.
07 - Mix together the powdered sugar and the pineapple juice you saved. Drizzle it over the loaf once it has cooled.

01 - Skipping the glaze is alright.
02 - Remember to save some pineapple juice after draining.
