In a medium mixing bowl, toss together salt, baking soda, and flour.

In another bowl, whip cream cheese, egg, vanilla, and sugar until the mix is velvety smooth.

Gently fold the flour mixture into the wet mixture. Add sour cream, stir to combine, then mix in the drained pineapple.

Pour the batter into the loaf pan and bake for 55-60 minutes. It’s done when a toothpick in the center comes out without sticky batter.

Let it cool in the pan for 15-20 minutes, then shift the loaf to a wire rack to cool down completely.

Mix together the powdered sugar and the pineapple juice you saved. Drizzle it over the loaf once it has cooled.
