Spinach Feta Quesadilla (Print Version)

# Ingredients:

→ Base

01 - 1 big flour tortilla
02 - 2 eggs, large in size
03 - 1 teaspoon butter or extra virgin olive oil

→ Vegetables & Seasonings

04 - Spinach, packed (1 1/2 cups or about 2 oz)
05 - A pinch of salt and black pepper
06 - Garlic powder (1/4 teaspoon)
07 - Onion powder, about 1/4 teaspoon

→ Cheese

08 - Mozzarella, freshly shredded (1/2 to 3/4 cup or roughly 2-2.5 oz)
09 - 1/4 cup of crumbled feta cheese (1 oz)

# Instructions:

01 - In a skillet, warm up your olive oil on medium heat. Toss in the spinach, onion powder, and garlic powder. Stir for about a minute until the spinach softens up.
02 - Crack the eggs and mix them straight into the pan with the spinach. Scramble everything together for a minute or two. Toss in the feta and stir before taking it off the heat.
03 - Turn heat to medium-low. Lay down the tortilla, sprinkle mozzarella on one half, then spread the egg-spinach mixture on top. Cover with the rest of the cheese and fold it in half.
04 - Cook each side for about 1-2 minutes until the tortilla crisps up and the cheese is gooey. Slice and enjoy warm.

# Notes:

01 - You can prep this ahead and freeze for up to 2 months.
02 - Reheat frozen pieces in a microwave, non-stick pan, or air fryer.
03 - Feel free to swap veggies or try other cheeses.
04 - Using fresh mozzarella melts much better than pre-shredded.
