Sausage Potatoes Skillet (Print Version)

# Ingredients:

01 - 1 medium onion, finely chopped
02 - 1 1/2 pounds small potatoes, cut into halves or quarters
03 - 2 tablespoons of olive oil
04 - 2 garlic cloves, crushed
05 - 1 pound smoked sausage, cut into 1/2-inch slices
06 - 1 teaspoon Italian spice mix
07 - 1/4 teaspoon ground black pepper
08 - 1 teaspoon smoked paprika
09 - 1/2 teaspoon salt
10 - 1 large bell pepper, cut into strips
11 - 1 cup fresh spinach leaves (optional)
12 - 2 tablespoons of parsley, freshly chopped for serving

# Instructions:

01 - In a pot of salted water, boil the potatoes for about 8-10 minutes. When they’re tender enough to pierce easily, drain them and let them cool a bit.
02 - Warm up 1 tablespoon of the olive oil in a big skillet over medium heat. Toss in the sliced sausage and cook until both sides are nicely browned, about 4-5 minutes. Take the sausage out and put it aside.
03 - Using the same pan, add the other tablespoon of oil. Stir in the onion and crushed garlic, cooking them until they smell amazing, around 2 minutes. Toss in the bell pepper and let that cook for another 3-4 minutes.
04 - Add the boiled potatoes to the skillet and sprinkle them with smoked paprika, the Italian seasoning, salt, and pepper. Let the potatoes cook, stirring now and then, until they get crispy and golden, about 5-7 minutes.
05 - Put the sausage back in the skillet and give everything a good stir. If you’re adding spinach, mix it in during the last 2 minutes, letting it wilt.
06 - Top the dish with the chopped parsley before serving. Pair it up with some fresh bread or a salad on the side if you’d like.
