Shrimp Toast Bites (Print Version)

# Ingredients:

→ Baguette and Flavorings

01 - 1 tablespoon of olive oil
02 - 1/4 teaspoon of crushed red pepper
03 - 1 small French baguette sliced into pieces about 1/2-inch thick
04 - Kosher salt to your liking
05 - 1/4-1/2 teaspoon of Cajun spice blend
06 - 1/4 teaspoon of freshly cracked black pepper
07 - Fresh ground black pepper, as needed

→ Shrimp Filling

08 - 4 ounces of cream cheese, diced into smaller cubes
09 - 1 pound of shrimp, deveined, peeled, and finely chopped
10 - 1 stalk of celery, minced well
11 - 1/4 cup of Parmesan cheese, shredded finely
12 - 3 garlic cloves, minced
13 - 1/4 cup of Fontina cheese, shredded finely
14 - 1/2 of a small onion, chopped finely
15 - 1 green onion, sliced as thin as possible

# Instructions:

01 - Set the broiler to low heat. Lay the baguette slices in a single layer on your baking sheet. Broil for about 3-5 minutes or until just toasted. Flip them over and repeat until both sides are light golden.
02 - Warm up the olive oil in a pan at medium heat. Add in the shrimp, along with the celery and onion. Stir it all together for about a minute. Toss in the garlic, sprinkle in some Cajun seasoning, and add black pepper. Keep stirring for another minute.
03 - Turn the heat down as low as you can. Stir in the cream cheese, Parmesan, and Fontina. Keep mixing until everything melts smoothly. Add kosher salt and fresh black pepper to taste.
04 - Spoon the shrimp mixture evenly over the toasted baguette slices. Sprinkle crushed red pepper over the top as desired. Pop them into an oven preheated to 400°F (200°C) for about 10 minutes or until they're bubbly and slightly golden.
05 - Scatter green onions on top and enjoy while still hot.
