Famous Shrimp Scampi (Print Version)

# Ingredients:

01 - 1 tablespoon chopped parsley
02 - 2 tablespoons minced garlic
03 - 1 lb shrimp, deveined, no shells
04 - ½ cup Parmesan, shredded
05 - 1 teaspoon Italian herb mix
06 - ½ cup softened butter
07 - Juice from half a lemon
08 - 1 ½ cups of a good white wine (Chardonnay is great)
09 - 1 tablespoon olive oil for cooking

# Instructions:

01 - Warm up a skillet on medium-high heat with some olive oil. Toss in your shrimp and cook till they turn pink and firm. Remove and keep them aside once done.
02 - Lower the heat to medium and throw in the garlic. Let it cook for a couple of minutes. Keep stirring and make sure it doesn't burn, or it'll taste bitter.
03 - Turn up the heat and pour in the wine with the lemon juice. Let it simmer and bubble until it reduces by about half.
04 - Once the wine has cooked down, sprinkle in the Italian herb seasoning.
05 - Turn the heat to low and slowly mix in the butter. Stir gently so it doesn't separate while melting.
06 - Toss the shrimp back into the skillet, sprinkle with parsley, and season with a touch of salt and pepper. Stir it up so everything gets coated in that sauce.
07 - Just before you serve, sprinkle the Parmesan over the shrimp for a final touch.
