Dice the chicken into 1-inch chunks. Get the rice and green beans ready by following the directions from their packaging.

Warm up the avocado oil in a pan on medium-high heat for about a minute. Toss in the chicken and cook it, stirring now and then, until the pieces are golden on all sides—roughly 10 to 12 minutes.

As the chicken is cooking, grab a mixing bowl and stir together lime juice, lime zest, honey, coconut aminos, rice vinegar, sesame oil, powdered ginger, minced garlic, and a pinch of black pepper.

Take the cooked chicken out of the skillet and set it aside. Pour the mixed sauce into the same skillet, turn the heat to medium-high, and stir regularly for around 3 to 5 minutes, allowing the mixture to bubble and thicken without sticking or burning.

Add the cooked chicken back to the pan. Stir it well so every piece is coated in the thickened sauce.

Dish up the sesame chicken over a bed of rice and green beans. Sprinkle some sesame seeds on top if you'd like.
