Sausage Cheese Bites (Print Version)

# Ingredients:

01 - 10 ounces Rotel tomatoes and chilies, well drained.
02 - 8 oz of cream cheese, brought to room temp.
03 - 1 3/4 cups of Bisquick baking mix.
04 - 2 cups grated cheese (pepper jack and cheddar work great).
05 - 1 pound uncooked spicy sausage.

# Instructions:

01 - Set your oven to 400°F and let it heat up.
02 - Throw the sausage, softened cream cheese, and drained Rotel into a bowl, then mix well.
03 - Stir in the Bisquick mix, followed by the shredded cheese.
04 - Roll the mixture into small 1-inch balls and line them up on a baking sheet covered with parchment.
05 - Bake for about 20-25 minutes until they're done and golden on top.

01 - Make ahead! Prep up to 2 days early.
02 - Pop them in the freezer for up to 2 months.
03 - For reheating, oven or crockpot works better than the microwave.
