# Ingredients:

01 - 1/2 cup milk
02 - 1 teaspoon baking powder
03 - 1 cup all-purpose flour
04 - 1/2 teaspoon salt
05 - 1/2 teaspoon ground nutmeg
06 - 1 teaspoon ground cinnamon
07 - 1 teaspoon vanilla extract
08 - 4 large eggs
09 - 1/2 cup unsalted butter, softened
10 - 1 cup granulated sugar
11 - 2 cups mashed sweet potatoes

# Instructions:

01 - Set your oven to 400°F and let the sweet potatoes roast for 45-60 minutes, making sure they're soft all the way through. Once cooled, remove the skins and mash until smooth.
02 - Turn the oven to 350°F. Coat a 9x5-inch loaf pan with butter and a light dusting of flour.
03 - Using a stand mixer, beat together the butter and sugar for a few minutes until it turns soft and light-colored.
04 - Crack in one egg at a time and mix each one in well before adding the next.
05 - Stir in the mashed sweet potatoes along with the vanilla, cinnamon, nutmeg, and salt. The batter should have a vibrant orange color when done.
06 - Whisk the flour with baking powder in a fresh bowl until they're nicely blended.
07 - Add the dry mix into the sweet potato batter in three rounds, alternating with milk in two rounds. Start and finish with the flour mix.
08 - Spoon the batter evenly into your greased loaf pan and smooth out the surface.
09 - Pop the pan into the oven and bake for 55-65 minutes, checking with a toothpick—it should come out with just a bit of moist crumbs.
10 - Let the loaf sit in the pan for 15 minutes before moving it to a wire rack to cool fully. It's best to leave it untouched for about 4 hours before digging in.
