Onion Chicken Dish (Print Version)

# Ingredients:

01 - 1/2 lb cauliflower florets.
02 - 1/2 lb potatoes, yellow, no peel.
03 - 1.5 cups broth made of beef.
04 - 2 teaspoons cornstarch.
05 - 2 medium onions, yellow, cut thin.
06 - 1 tablespoon butter, salted.
07 - 2 tablespoons oil, avocado.
08 - 4 slices of cheese, provolone.
09 - 1/2 cup gruyere, shredded.
10 - Salt plus pepper, to your taste.
11 - Garlic powder, use as needed.
12 - 2 pieces of chicken breast, about 1 lb, split lengthwise.
13 - 1 teaspoon rosemary, dried.
14 - Fresh thyme for sprinkling.
15 - 1 teaspoon kosher salt.
16 - 1 teaspoon thyme, dried.
17 - 1/4 teaspoon black pepper.
18 - 2 tablespoons thick Greek yogurt.

# Instructions:

01 - Sprinkle salt, herbs, black pepper, and garlic powder over the chicken evenly.
02 - Throw onions into hot oil with broth, cover for 8 minutes to cook.
03 - Take off the lid and let it cook till they caramelize, about 20 minutes.
04 - Take the onions out, then sear the chicken for 2 minutes on each side.
05 - Whisk cornstarch into leftover broth till it's smooth.
06 - Pour the thickened broth over the pan; let it simmer and thicken for another 3 minutes.
07 - Put the chicken back in the pan, spread onions and cheeses on top, and cover it until the cheese melts (about 5 mins).
08 - Get the potatoes and cauliflower super soft by boiling them up.
09 - Blend the cooked veggies with butter, seasonings, and yogurt till creamy.

# Notes:

01 - Toast under the broiler for extra golden cheese.
02 - Make onions richer by caramelizing longer.
03 - For bigger gatherings, double mash amounts.
04 - This cook serves about 3 to 4 people.
