Olive Oil Dip Herbs (Print Version)

01 - 3 garlic cloves, crushed
02 - 2 teaspoons chili flakes
03 - 1/2 cup Parmesan cheese, grated fresh
04 - 1 tablespoon thyme, fresh leaves
05 - 1 tablespoon rosemary, finely chopped
06 - 1/4 teaspoon sumac
07 - 1 tablespoon Kalamata olives, minced small
08 - 1 tablespoon sea salt flakes, tweak as needed
09 - 3/4 cup extra virgin olive oil
10 - 2 tablespoons balsamic vinegar
11 - Zest from 1 lemon
12 - 2 tablespoons sundried tomatoes, chopped small

# Instructions:

01 - Pour the olive oil and balsamic vinegar into a low dish or bowl. Add in the cheese, sundried tomato bits, minced olives, rosemary, thyme, garlic, chili flakes, lemon zest, and sumac. Get everything in there.
02 - Mix it all with a spoon until you see it come together nicely. Taste a little to see if the salt's right. Add more flakes if it feels bland.
03 - You can leave it in the same bowl to dip straight away or pour into a prettier dish before serving. Pair it with crusty bread or something herby, like rosemary focaccia.
