Toss softened cream cheese, sweetened condensed milk, lime juice, and most of the lime zest (save a little) into a big bowl. Blend on high power till it's creamy and smooth (around 4 minutes).

Spoon the creamy mixture into the graham cracker crust.

Sprinkle the leftover lime zest over the top, then pop it in the fridge for 3–4 hours until the filling firms up.

Keep it cool while serving, and add some lime slices on top if you want.
