No-Bake Buckeye Delights (Print Version)

# Ingredients:

01 - 1 1/2 cups smooth peanut butter
02 - 1/2 cup softened butter
03 - 2 1/2 cups powdered sugar
04 - 12 graham crackers (around 1 1/2 sleeves or half a standard box)
05 - 3 cups semi-sweet chocolate chips
06 - 2 tablespoons coconut oil or shortening

07 - 1/2 cup peanut butter-flavored chips
08 - 1 teaspoon coconut oil or shortening

# Instructions:

01 - Cover two pans with parchment and set wire racks on top.
02 - Whip softened butter with peanut butter in a big bowl until it's smooth and creamy.
03 - Add powdered sugar a little at a time, matching it in until it's well blended.
04 - Make small balls from the mixture. Flatten and spread each ball onto one side of a graham cracker, reaching the edges evenly.
05 - On low to medium heat, melt the chocolate chips with coconut oil (or shortening) in a saucepan. Stir it until velvety smooth, then let it slightly cool down.
06 - Dip the peanut butter-covered side of the crackers into the melted chocolate. Transfer them to the wire rack to cool.
07 - Melt peanut butter chips along with coconut oil or shortening. Once melted, drizzle this over the chocolate-covered crackers using a spoon.
08 - Leave the chocolate to solidify for a couple of hours at room temp. Or pop it in the fridge if you want it done faster.

# Notes:

01 - Setting the chocolate in the fridge speeds things up, but for less condensation, let it set on the counter.
