Cover two pans with parchment and set wire racks on top.

Whip softened butter with peanut butter in a big bowl until it's smooth and creamy.

Add powdered sugar a little at a time, matching it in until it's well blended.

Make small balls from the mixture. Flatten and spread each ball onto one side of a graham cracker, reaching the edges evenly.

On low to medium heat, melt the chocolate chips with coconut oil (or shortening) in a saucepan. Stir it until velvety smooth, then let it slightly cool down.

Dip the peanut butter-covered side of the crackers into the melted chocolate. Transfer them to the wire rack to cool.

Melt peanut butter chips along with coconut oil or shortening. Once melted, drizzle this over the chocolate-covered crackers using a spoon.

Leave the chocolate to solidify for a couple of hours at room temp. Or pop it in the fridge if you want it done faster.
