Mango Chicken Salad (Print Version)

# Ingredients:

→ Greens and Add-Ins

01 - 6 cups fresh romaine, washed, dried, and chopped up
02 - 1 pound of cooked chicken sliced into strips
03 - 2 cups baby spinach leaves
04 - 2 cups of halved tiny cherry tomatoes
05 - 1 mango, peeled, diced, and seed removed
06 - 1/3 cup red onion, finely chopped
07 - 1 English cucumber, sliced into little semi-circles
08 - 1/4 cup finely chopped parsley or cilantro

→ Sweet and Tangy Dressing

09 - 1/3 cup high-quality olive oil
10 - 2 teaspoons of Dijon mixed well
11 - 1 to 2 tablespoons of honey, depending on your sweetness preference
12 - 3 tablespoons of fresh-squeezed lemon juice
13 - 1 garlic clove, minced into tiny pieces
14 - 1/4 teaspoon ground black pepper to taste
15 - 1/2 teaspoon salt, add more if needed

# Instructions:

01 - Toss the romaine chunks and spinach into a big salad mixing dish.
02 - Spread over the mango pieces, halved tomatoes, cucumbers, red onion, and either parsley or cilantro. Keep it aside for now.
03 - Combine olive oil, lemon juice, honey, Dijon, minced garlic, salt, and pepper in a bowl. Adjust flavor as needed.
04 - Pour the dressing on top of your salad mix.
05 - Serve right after assembling.
