# Ingredients:

01 - 12 large Medjool dates (roughly 1 cup)
02 - 3/4 cup of raw, unsalted cashews
03 - Half a cup of shredded coconut flakes
04 - Juice and zest from 4 key limes (or one standard lime)
05 - 1 tablespoon of pure maple syrup

06 - Extra shredded coconut (around 1/4 cup) for rolling

# Instructions:

01 - Throw the dates and cashews into a food processor. Blend them up until they look like fine crumbs or sand.
02 - Add the coconut, lime zest and juice, and maple syrup to the processor. Blend it until you get a dough. If it's not sticking together, add small splashes of water—a tablespoon at a time—until it holds when you squish it.
03 - Grab small amounts of dough to create bite-sized balls, about 1 inch in size. Roll them in the extra coconut flakes if you’d like, then set them on a parchment-covered plate.
04 - If you want soft bites, go ahead and enjoy them now. For a firmer texture, stick them in the freezer for about an hour. Store leftovers in a sealed container in the freezer, or use the fridge if you want them softer.
