Throw the dates and cashews into a food processor. Blend them up until they look like fine crumbs or sand.

Add the coconut, lime zest and juice, and maple syrup to the processor. Blend it until you get a dough. If it's not sticking together, add small splashes of water—a tablespoon at a time—until it holds when you squish it.

Grab small amounts of dough to create bite-sized balls, about 1 inch in size. Roll them in the extra coconut flakes if you’d like, then set them on a parchment-covered plate.

If you want soft bites, go ahead and enjoy them now. For a firmer texture, stick them in the freezer for about an hour. Store leftovers in a sealed container in the freezer, or use the fridge if you want them softer.
