Sausage Lentil Dish (Print Version)

# Ingredients:

01 - 1 tablespoon cilantro, finely chopped.
02 - Salt and black pepper, as needed.
03 - 16 ounces dried brown lentils.
04 - 4 tablespoons of tomato paste.
05 - 1/4 cup of olive oil.
06 - 1 tablespoon parsley, minced.
07 - 7½ cups chicken or beef broth.
08 - 12 ounces kielbasa, smoked and sliced.
09 - 6 cloves of garlic, crushed.
10 - 1 large onion, diced.
11 - 1 teaspoon smoked paprika powder.
12 - 1 tablespoon harissa spice mix.

# Instructions:

01 - Warm olive oil in a big pot on medium-high heat.
02 - Toss in garlic and spices, stir for a minute.
03 - Cook smoked sausage slices until they get a nice golden color.
04 - Cover the pot and let it simmer for about 40-45 minutes.
05 - Put in the diced onion along with a pinch of salt and pepper; let it cook for a couple of minutes.
06 - Mix in the fresh herbs just before serving.
07 - Quickly add the tomato paste and mix for half a minute.
08 - Let it reach a boil, then turn the heat down low.
09 - Pour in lentils and the stock.

# Notes:

01 - Serve alongside freshly baked bread or hearty flatbread.
02 - Turkey or beef sausage works too.
03 - It's good to sort through your lentils to remove any debris.
04 - This dish will thicken up a bit as it cooks.
