Juicy Greek Lemon Chicken (Print Version)

# Ingredients:

→ Chicken

01 - 8 chicken thighs with the bone in

→ Lemony Greek Marinade

02 - 1/3 cup of good olive oil
03 - 1/4 cup freshly squeezed lemon juice
04 - 4 cloves of garlic, chopped up fine
05 - 1 tablespoon of oregano (dried)
06 - 2 teaspoons of dried thyme
07 - 2 teaspoons of mustard (Dijon works great)
08 - 2 teaspoons of kosher salt
09 - 1 teaspoon of black pepper, freshly ground

# Instructions:

01 - Combine olive oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper in a tiny bowl. Stir until everything’s mixed evenly.
02 - Put the chicken thighs in a big bowl. Pour the marinade all over them, making sure they’re coated well. Stick it in the fridge and let it marinate for 1-2 hours or leave it up to 8 hours if you’ve got extra time.
03 - Preheat your oven to 350°F (180°C). Arrange the chicken thighs in a casserole or baking dish, pouring the leftover marinade on top of the chicken.
04 - Bake the chicken for 40-45 minutes, or until it hits 175°F (80°C) in the center. If you want crispy skin, broil it for the last 2 minutes. Baste every now and then using the juices in the pan for extra flavor.
