Combine olive oil, lemon juice, garlic, oregano, thyme, mustard, salt, and pepper in a tiny bowl. Stir until everything’s mixed evenly.

Put the chicken thighs in a big bowl. Pour the marinade all over them, making sure they’re coated well. Stick it in the fridge and let it marinate for 1-2 hours or leave it up to 8 hours if you’ve got extra time.

Preheat your oven to 350°F (180°C). Arrange the chicken thighs in a casserole or baking dish, pouring the leftover marinade on top of the chicken.

Bake the chicken for 40-45 minutes, or until it hits 175°F (80°C) in the center. If you want crispy skin, broil it for the last 2 minutes. Baste every now and then using the juices in the pan for extra flavor.
