Line an 8 x 8-inch or 9 x 9-inch square pan with two overlapping plastic wrap sheets, with the edges hanging over. Lightly grease the plastic and set it aside.

Put the powdered sugar, honey, butter, heavy cream, marshmallows, and salt into a large saucepan.

Using a heatproof spatula, stir constantly over medium heat until the mixture begins bubbling.

Let it gently bubble while stirring nonstop for about 7 minutes.

Take off the heat and mix in the vanilla and white chocolate chips until everything is smooth and melted together.

Pour it into the prepped pan, smoothing the top. Stick it in the fridge for 4 hours minimum, or leave overnight.

Lift the fudge out of the pan using the plastic wrap. Peel off the wrap and cut into pieces of your choice.
