Halloumi Watermelon Mint (Print Version)

# Ingredients:

01 - 1/4 cup mint leaves, fresh
02 - 1 tbsp lemon juice
03 - 8 oz halloumi cheese, sliced up
04 - 4 cups cubed watermelon
05 - 1 tbsp olive oil
06 - A pinch of salt and pepper

# Instructions:

01 - Warm up a grill pan on medium-high heat, and grill the halloumi until it’s browned on both sides. It'll take about 2 to 3 minutes for each side.
02 - Toss the cubed watermelon with the grilled halloumi in a big bowl.
03 - Gently add the fresh mint leaves into the mixture.
04 - Stir together lemon juice, olive oil, salt, and pepper in a little bowl.
05 - Pour the dressing over the salad, mix lightly, and eat right away.
