Heat up your griddle to medium for a few minutes. Drizzle some oil and toss in the chopped potatoes. Sprinkle with kosher salt, pepper, and your seasoning blend.

Pour in some water, then cover everything up with a melting dome. Let them steam for 8 to 9 minutes. Take the dome off every now and then to stir with hibachi spatulas. Add a little water each time before covering again.

Remove the melting dome, pour in a bit more cooking oil, then add the steak, garlic, kosher salt, pepper, and seasoning mix. Stir it well with hibachi spatulas as it cooks for about 5 to 6 minutes.

In the final minute of cooking, add the butter and mix until it melts and covers everything evenly.
