# Ingredients:

01 - 2 lbs of red potatoes, chopped into chunks about 1 inch big.
02 - 2 tbsp olive oil.
03 - 1/2 cup parmesan cheese, finely grated.
04 - Three cloves of garlic, minced up.
05 - 1/2 teaspoon dried oregano.
06 - A quarter teaspoon of salt.
07 - A quarter teaspoon of black pepper.
08 - Fresh parsley, chopped, for sprinkling on top.

# Instructions:

01 - Turn on your oven to 400°F. Spray your baking pan lightly with cooking spray.
02 - Stir together the olive oil, parmesan, garlic, and oregano in a big bowl. Toss the potato pieces in the mixture till they're all evenly coated.
03 - Spread the potato chunks in a single layer on the baking tray. Sprinkle with salt and pepper. Add extra parmesan on top if you'd like.
04 - Pop them in the oven for 30 to 35 minutes or until they're crispy and golden. Sprinkle parsley over them before eating.

# Notes:

01 - Tastes best when it’s eaten right away.
02 - Keep the potatoes in one layer to make them crispier.
03 - Add some extra parmesan if you’re a fan.
