Fluffy Easter Roll (Print Version)

# Ingredients:

→ Sponge Cake

01 - Milk, 2 tablespoons
02 - 4 eggs, large, at room temperature
03 - ¾ cup sugar (granulated)
04 - 1 teaspoon vanilla
05 - ¾ cup flour (all-purpose)
06 - 1 teaspoon baking powder
07 - A pinch of salt (¼ teaspoon)
08 - Dusting of powdered sugar

→ Filling (Vanilla Cream Option)

09 - Whipping cream, 1 cup (heavy)
10 - Powdered sugar, ¼ cup
11 - Vanilla, 1 teaspoon

→ Optional Filling Variations

12 - Lemon Cream: Add lemon zest (1 tablespoon) and lemon juice (1 tablespoon) into the vanilla filling.
13 - Cream Cheese Option: Beat cream cheese (8 oz) with powdered sugar (½ cup) and vanilla (1 teaspoon).
14 - Chocolate Ganache: Blend melted chocolate (1 cup) with heavy cream (½ cup).

# Instructions:

01 - Turn on the oven and set it to 175°C (350°F). Prep a 10×15-inch jelly roll pan by lining it with parchment and greasing lightly. Beat the eggs and sugar in a big bowl using an electric mixer for around 3 minutes, or until you get a thick and light mix. Stir in milk and vanilla extract until smooth. Separately, mix flour, salt, and baking powder. Fold the dry mix gently into the wet one without overmixing (keep the batter fluffy).
02 - Pour your batter into the prepped pan, spreading it evenly. Bake for about 12-15 minutes or until it springs back if lightly pressed. Get a clean kitchen towel ready, sprinkle powdered sugar on it, and lay it out on a counter. Flip the baked cake onto the sugar-coated towel, gently peel off the parchment, and roll the cake up from one of the shorter ends (towel included). Cool the rolled cake fully.
03 - Whip cream, powdered sugar, and vanilla until soft peaks form. Unroll your cooled cake and spread the filling over it evenly. Gently roll it back (don’t use the towel this time), placing the seam at the bottom. Wrap it snugly in plastic wrap, chill for 30 minutes, and it’s all set to slice and serve.

01 - Eggs give the sponge cake its fluffy, light feel.
02 - Dusting powdered sugar on the towel keeps the cake from sticking while rolling.
