Preheat your oven to 350°F (175°C). Grease a 9x13 pan with melted butter so the food slides out easily.

In a big bowl, combine the eggs, flour, cottage cheese, salt, and shredded Pepperjack. Stir until everything looks blended together.

Pour the mixture into your prepared pan. Pop it in the oven and let it bake for 50-60 minutes. Peek in around the 45-minute mark to check if the eggs have cooked through.

Cut the dish into squares while still warm. Top with your choice of salsa, guac, sour cream, or anything else you like.
