Easy Lamington Bars (Print Version)

# Ingredients:

01 - ¼ cup coconut flakes
02 - ¾ cup cashews
03 - 1 tablespoon raw cacao powder
04 - 1 cup dates

# Instructions:

01 - Pop the dates in a bowl and pour warm water over them. Let them sit for around 10 minutes to soften up.
02 - Once the dates are soft, drain off the water. Toss them into a food processor with the cashews, cacao powder, and coconut flakes. Blitz everything until it's all blended and sticky.
03 - Line a small square pan or loaf pan with some baking paper, then scoop in the mix. Use your hands or the flat part of a glass to push it down firmly so the top is even.
04 - Stick the pan in the fridge for an hour to set. Once it's firm, lift the mixture out using the paper and slice it into even bars with a sharp knife.

01 - Store them in an airtight container in the fridge, and they’ll stay good for up to a week.
