Easy Chicken Sausage Dish (Print Version)

01 - 3 ribs celery, chopped into small bits
02 - 1 green bell pepper, deseeded and diced
03 - 12 ounces andouille sausage, cut into slices about 1/4-inch thick
04 - 1 1/2 cups white rice (long grain)
05 - 14.5-ounce can of diced tomatoes, including the liquid
06 - 3 cloves garlic, finely chopped
07 - 1 yellow onion, chopped small
08 - 3 green onions, sliced
09 - 1/4 teaspoon dried thyme leaves
10 - 1 teaspoon dried basil
11 - 2 teaspoons Cajun seasoning mix
12 - 1/2 teaspoon kosher salt
13 - 1 boneless and skinless chicken breast, cut into bite-sized chunks
14 - 1/2 teaspoon sugar (granulated)
15 - 1 3/4 cups chicken broth (low-sodium)
16 - 2 tablespoons oil, split into two portions

# Instructions:

01 - Switch the Instant Pot to sauté mode and drop in 1 tablespoon of oil. Once the oil is hot, add slice by slice of andouille sausage. Cook until both sides are browned, about 2-3 minutes each. Move the sausage onto a plate lined with a paper towel, and keep it aside for later.
02 - Pour the leftover tablespoon of oil into the pot. Drop in the chicken chunks, letting them cook briefly for about a minute. Scrape up any leftover sausage bits stuck to the bottom. Turn off the Instant Pot after this step.
03 - Toss the yellow onion, chopped green pepper, minced garlic, and diced celery into the still-warm pot. Sauté them lightly for about a minute using the pot’s leftover heat.
04 - Sprinkle in the Cajun seasoning, dried thyme, basil, and sugar, then pour in the rice. Stir everything to coat the rice well with the seasonings and any oil left in the pot.
05 - Pour in the chicken broth, followed by the diced tomatoes straight from the can, including their juice. Sprinkle the salt over everything and gently stir to make sure the rice is spread evenly in the liquid.
06 - Close the Instant Pot lid tightly. Turn the valve to sealing, then set the pot on Manual High Pressure for 5 minutes. Once the timer is up, allow the pressure to lower on its own for 5 minutes before carefully releasing the rest manually.
07 - Open the pot and gently fluff the cooked rice using a fork. Lay the sausage slices on top of the rice, then cover the pot with the lid again (no pressure this time). Let it sit for about 5 minutes so the sausage can warm through, and the flavors can blend together. Give everything a good toss before serving.
