Crispy Spinach Bites (Print Version)

# Ingredients:

01 - 1 cup Italian-style breadcrumbs, gluten-free.
02 - 10 oz frozen spinach, thawed and squeezed dry.
03 - 1/4 teaspoon freshly ground black pepper.
04 - 2 large eggs, lightly beaten.
05 - 1/8 teaspoon nutmeg powder.
06 - 2 tablespoons butter, softened.
07 - 1/4 teaspoon salt to taste.
08 - 1/4 cup sesame seeds, raw.
09 - 1/2 cup Parmesan cheese, finely grated.

# Instructions:

01 - Preheat the oven to 350°F. Cover a baking tray with parchment paper.
02 - On medium heat, stir sesame seeds in a dry pan until they turn golden, about 2-3 minutes. Take off heat and let them cool.
03 - Mix the squeezed spinach with eggs, breadcrumbs, cheese, butter, and seasonings in a bowl.
04 - Roll mixture into about 20 balls, each the size of a tablespoon. Coat them by rolling in toasted sesame.
05 - Spread bites on the lined sheet and bake for around 10 minutes until they're set and firm.

02 - Store uncooked in the fridge for up to one day.
