# Ingredients:

→ Salmon Bites

01 - 2 tablespoons cornmeal
02 - ½ teaspoon cayenne pepper
03 - ¼ teaspoon pepper
04 - ½ teaspoon salt
05 - ¾ teaspoon maple syrup
06 - 2 teaspoons paprika
07 - 1 lb. salmon, cut into chunks about 3-inches wide
08 - ½ lime, squeezed for juice
09 - ¼ cup peanut oil

→ Avocado Onion Relish

10 - ½ lime, squeezed for juice
11 - ¼ cup finely chopped red onion
12 - Salt and pepper, adjust to your liking
13 - 2 avocados, diced into cubes
14 - ½ tablespoon freshly chopped cilantro

# Instructions:

01 - Slice the salmon into chunks about 3 inches long and pat them dry. You can decide to leave the skin on or remove it—it’s up to you.
02 - Grab a big bowl and stir together the paprika, cayenne, salt, maple syrup, lime juice, and pepper. Make sure it’s all smooth and blended.
03 - Drop the salmon pieces into the seasoning mix and make sure each piece is evenly covered. Let them sit and soak up the flavors for 15 minutes.
04 - When you’re ready to fry, sprinkle cornmeal onto the seasoned salmon and toss everything gently so all the pieces get a nice coating.
05 - Warm up the peanut oil in a pan over medium heat (a cast iron skillet works great). Lay the salmon pieces in the pan and cook for a couple minutes on one side until golden, then flip them to cook through.
06 - In another bowl, toss together the chopped avocado, onion, lime juice, cilantro, and a pinch of salt and pepper. Mix it gently so the avocado doesn’t mash.
07 - Take the salmon out of the pan and serve it up alongside the cool avocado relish. Enjoy!
