01 - Cooking spray
02 - 5 tablespoons arrowroot powder or cornstarch
03 - 2 cups mashed potatoes (fresh or leftovers)

# Instructions:

01 - Toss the mashed potatoes into a bowl with the arrowroot or cornstarch. Stir until it turns into a dough that’s firm, easy to shape, and kinda like thick gnocchi dough. Need extra flour or starch? Sprinkle some in!
02 - With clean hands, mold the mixture into little balls—go for something just a tad smaller than a golf ball.
03 - Place the balls in your air fryer basket, giving them a generous spritz of oil. Cook them at 450°F for about 15–20 minutes, until they have a crispy golden shell.

# Notes:

01 - Tastes great with vegan green goddess dip, ketchup, or aioli
02 - If you don’t have cornstarch or arrowroot, go ahead and swap in flour
03 - Roll them in breadcrumbs, seeds, or cornmeal before cooking for extra texture
04 - Spice it up before making your dough—add seasoning
05 - No air fryer? Bake them on a lined tray in a regular oven instead
