Creamy Cajun Pasta Dish (Print Version)

# Ingredients:

01 - 2 chicken breasts without skin or bones.
02 - 8 ounces of linguine.
03 - 1/2 cup parmesan, grated.
04 - 2 minced garlic cloves.
05 - 2/3 cup tomatoes, diced.
06 - 1 1/2 cups of thick cream.
07 - 2 tablespoons soft butter.
08 - 2 teaspoons olive oil.
09 - 2 tablespoons finely chopped parsley.
10 - 1 1/2 - 2 tablespoons of cajun spice mix, split.

# Instructions:

01 - In a big pot of salted water, cook pasta until it’s just firm enough. Scoop out 1/2 cup of water, then drain the rest. Keep pasta warm.
02 - Even out chicken thickness with a mallet. Sprinkle on 1 1/2 tablespoons cajun spice mix.
03 - Heat a bit of oil on medium-high, cook chicken on one side until browned, then lower heat to finish cooking. Slice and put aside.
04 - Sauté garlic in melted butter until it smells amazing. Toss in tomatoes for 2 minutes. Stir in cream, the rest of the cajun spice, and parmesan. Let simmer.
05 - Throw chicken slices and prepared pasta into the sauce mixture. Stir it all. If the sauce is too thick, add a splash of the saved pasta water.
06 - Dish everything out and sprinkle parsley and more parmesan on top.

# Notes:

01 - Avoid using cast iron or copper pans with cream-based sauces.
02 - Taste your cajun seasoning first since different brands can be saltier.
03 - If needed, adjust thickness by stirring in some pasta water.
