In a big pot of salted water, cook pasta until it’s just firm enough. Scoop out 1/2 cup of water, then drain the rest. Keep pasta warm.

Even out chicken thickness with a mallet. Sprinkle on 1 1/2 tablespoons cajun spice mix.

Heat a bit of oil on medium-high, cook chicken on one side until browned, then lower heat to finish cooking. Slice and put aside.

Sauté garlic in melted butter until it smells amazing. Toss in tomatoes for 2 minutes. Stir in cream, the rest of the cajun spice, and parmesan. Let simmer.

Throw chicken slices and prepared pasta into the sauce mixture. Stir it all. If the sauce is too thick, add a splash of the saved pasta water.

Dish everything out and sprinkle parsley and more parmesan on top.
