Stir the cinnamon with 1/2 cup sugar until blended in a bowl or bag. Leave it aside.

Pour oil into a fryer or deep pot, heating until it's 375°F. Keep the oil level about 2 1/2 inches deep.

In a saucepan, toss in the water, 2 1/2 tablespoons sugar, salt, and 2 tablespoons of oil. Bring it to a boil.

Take the pan off the heat. Stir in the flour until it changes into a ball of dough.

Let the dough cool enough to touch. Roll it gently into balls about the size of walnuts.

Drop 3 or 4 balls into the hot oil and cook them until golden and crispy.

Take the hot fried balls and shake them in the cinnamon sugar mixture until coated.
