Chocolate Pecan Bites (Print Version)

# Ingredients:

01 - 16 oz semi-sweet chocolate, broken into small pieces.
02 - 2/3 cup crushed graham crackers turned into crumbs.
03 - 2 cups finely chopped fresh pecans.
04 - 1/3 cup melted unsalted butter.
05 - 1/4 teaspoon of salt.
06 - 1 tablespoon light corn syrup.
07 - 1/4 cup real maple syrup.
08 - 3/4 cup packed brown sugar.
09 - 1/2 teaspoon rum flavoring.
10 - Extra chopped pecans for garnish.

# Instructions:

01 - Mix together brown sugar, salt, pecans, and graham cracker crumbs in a mixing bowl.
02 - Stir in melted butter, corn syrup, maple syrup, and rum flavor. Use your hands to get it to a crumbly texture.
03 - Scoop out portions of the mixture with a cookie scoop, then roll them gently into balls using your palms.
04 - Arrange the balls on a tray lined with parchment and freeze them for an hour to firm up.
05 - Microwave the chocolate chunks to melt, stirring regularly until completely smooth.
06 - Dip each chilled ball into the smooth chocolate, making sure it's fully coated. Sprinkle pecan pieces on top.
07 - Let the chocolate set either at room temperature or speed it up with a quick chill in the freezer for 5 to 10 minutes.

# Notes:

01 - For the best flavor, leave them out at room temp before serving.
02 - Go easy when rolling—too much pressure can make them fall apart.
