Mix cocoa powder, flour, salt, and baking powder in a medium bowl.

Use an electric mixer to cream together the softened butter and sugar. Beat for 2-3 minutes until it turns fluffy and pale.

Add the egg, vanilla, and almond extract (if using) into the butter mixture. Mix until smooth.

On low speed, slowly add the dry mixture to the wet ingredients. Mix until a soft, sticky dough forms.

Split the dough into two parts. Shape each into a disc, wrap them in plastic, and chill in the fridge for at least 1 hour or up to two days.
