Start by covering the eggs with cold water in a pot. Let it boil, then simmer for 10 minutes on low heat. Put the eggs right into an ice water bath to cool. It'll make peeling easy.

After peeling, cut the eggs down the middle (lengthwise). Carefully take out the yolks and drop them into a bowl for mixing.

Using a fork, mash yolks with mayo and chili garlic sauce until smooth and creamy. Want it spicier? Add extra chili sauce to taste.

Put the yolk mixture back into the whites, either with a spoon or a piping bag. Fancy it up with a star-shaped piping tip if you’d like.

Dust smoked paprika on top and sprinkle fried onions for crunch. Eat right away or pop them in the fridge until serving time.
