Set the temperature to 200°C (400°F), and give your muffin pan a light coating of grease so things won't stick.

Grab a big bowl and whisk the sour cream together with eggs until the mix is smooth and creamy.

Throw in the chopped chives, Parmesan, and shredded cheese, then mix well until everything is evenly spread out.

Carefully mix the cold mashed potatoes into the mixture. Be gentle, so you don't mess up the texture.

Scoop the mixture into the muffin pan, filling each cup mostly full but leaving a little room at the top for puffing up.

Pop the tray into the oven. Bake for around 20–25 minutes until the tops turn a nice golden color and puff up a bit.
