Turn on your oven and set it to 375F/190C with the fan. Slice open the croissants down the middle.

Start with a slice of cheese, then layer on two pieces of ham. Add another layer of cheese on top of that.

Combine the mustard, honey, and brown sugar in a small bowl. Spread this over the tops of the croissants and sprinkle poppy seeds all over.

Pop them into the oven for 6-7 minutes. Take them out once hot and melty, then enjoy right away!
